Spinach & Chickpea Bites
Looking for a tasty, nutritious snack perfect for parties or on-the-go? These Spinach & Chickpea Bites are packed with plant-based protein, leafy greens, and tangy feta. They’re a great way to use up spinach from your fridge. Baked, not fried, and served with a fresh herb yogurt dip, they’re quick, easy, and delicious!
Ingredients:
For the Spinach & Chickpea Bites:
- 250g chickpeas (canned, drained)
- 3 cups of baby spinach (or regular spinach)
- 100g feta cheese
- 50g fresh coriander (or mint/parsley)
- 1 egg
- 3 tbsp olive oil
- Salt and pepper to taste
For the Dipping Sauce:
- 3 tbsp natural yogurt
- 1 tbsp chopped herbs (dill, chives, parsley)
- Juice of half a lemon
- Salt to taste
- 1/2 clove garlic, grated (optional)
Instructions:
1- Blend chickpeas, spinach, feta, herbs, egg, olive oil, salt, and pepper in a food processor until smooth.
2- Shape the mixture into bite-sized dots using a piping bag, on a lined baking tray.
3- Bake at 180°C (350°F) for 10-15 minutes, until firm and golden.
4- Mix yogurt, herbs, lemon, salt, olive oil, and garlic for the sauce.
5- Serve bites warm with the sauce, and store leftovers in an airtight container.
