Simple Roasted Yam Recipe

Simple Roasted Yam Recipe

Known as oca in the rest of the world, but known as yams in New Zealand, these little red root veggies are full of flavour! These brightly colored tubers have their origins in the South American Andes and were introduced to England and New Zealand in the mid-1800s to rival the potato. Despite their name, Oca is not a true yam, though they are often called yams in New Zealand. They are small like fingerling potatoes and come in a variety of colours, offering a starchy and tangy flavor.

Yams / Oca can be used in any dish where you would typically use potatoes. They can be boiled, mashed, or sliced and roasted. Here's a simple, easy, and healthy recipe for roasted New Zealand yams:

Ingredients:

  • Yams
  • Olive oil (enough to coat, but not saturate)
  • Salt
  • Cracked pepper

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare: Wash and dry the yams thoroughly, then cut them lengthwise.

  3. Season: Place the cut yams on a baking sheet lined with aluminum foil or parchment paper. Drizzle with enough olive oil to coat but not saturate. Sprinkle with salt and cracked pepper to taste. Hand-toss to ensure even coating.

  4. Arrange and Roast: Roast skin side down, on the baking sheet. Bake on the top rack of the oven.

  5. Flip and Finish Baking: After 10-12 minutes, carefully flip each one over skin side up. Replace back on the top rack and bake for another 15-20 minutes, or until the inside is golden brown.

  6. Serve and Enjoy: Serve as a delicious side dish or a healthy snack. Enjoy their unique, tangy flavour and nutritious benefits!

Oca, or yams in New Zealand, are a versatile and nutritious vegetable that can be a fantastic addition to your meals. Whether you're looking for a new side dish or a healthy snack, this simple roasted recipe is sure to please. Try it out and discover the deliciousness of New Zealand yams!
