Roasted Kohlrabi
If you haven't tried kohlrabi yet, you're in for a treat! This quirky veggie has a subtle sweetness and a satisfying crunch that comes alive when roasted. In this simple recipe, we slice kohlrabi into disks, roast it to perfection, and top it off with a sprinkle of Parmesan (if you're feeling cheesy). It’s an easy way to enjoy a seasonal vegetable that's as delicious as it is unexpected!
Ingredients:
- 3 kohlrabi bulbs, peeled and sliced into 1 cm disks
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/3 cup grated Parmesan cheese (optional)

Preheat the Oven: Preheat your oven to 200°C and line a baking sheet with parchment paper.

Prepare the Kohlrabi: Place the kohlrabi disks in a bowl. Drizzle with olive oil, then sprinkle with salt, pepper, and garlic powder. Toss well to coat evenly.

Arrange and Roast: Lay the kohlrabi slices in a single layer on the prepared baking sheet. Roast in the oven for 20-25 minutes, flipping halfway through, until they are golden brown and tender.

Add Parmesan (Optional): If using Parmesan, sprinkle it over the kohlrabi during the last 5 minutes of roasting, allowing it to melt and become crispy.
