Miso Garlic Butter Sweetcorn Ribs

This Miso Garlic Butter Sweetcorn Ribs recipe is the perfect way to enjoy juicy, golden corn with a rich umami twist. Crispy on the outside and buttery on the inside, these corn ribs make an excellent side dish or snack.

Easy, delicious and a little bit addictive!

Ingredients:

  • 2 x corn on the cob

  • 2 tbsp cornstarch

  • 3 tbsp butter

  • 1 tbsp miso paste

  • 1 tsp minced garlic

  • 1 tbsp fresh herbs (chives, parsley, etc.)

  • Fresh lime (for serving)

Method:

1. Boil the Corn
Bring a large pot of water to a boil. Add the corn cobs and cook for 8-10 minutes until tender. Remove from the water and let them cool slightly.

2. Cut into Ribs & Coat
Carefully cut each cob into quarters lengthwise to create “ribs.” Toss them in cornstarch, ensuring an even coat.

3. Bake Until Crispy
Preheat your oven to 200°C (fan-forced). Arrange the coated corn ribs on a lined baking tray and bake for 20-25 minutes, turning once, until they start to crisp up and turn golden.

4. Make the Miso Butter
While the corn ribs are baking, mix softened butter with miso paste, minced garlic, and fresh herbs in a small bowl until well combined.

5. Toss & Serve
Once the corn ribs are hot and crispy, toss them in the miso butter mixture until evenly coated. Serve immediately with a squeeze of fresh lime and extra herbs for garnish.
