Ingredients

  • Broccoli stems (from 1-2 heads)
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp sugar
  • (Optional) Splash of mirin for extra depth

 

Method

  1. Prep the stems: Trim off any tough ends and peel the outer layer if it's extra fibrous. Slice the stems into thin rounds or matchsticks.
  2. Make the marinade: In a bowl, mix soy sauce, rice vinegar, sugar, and mirin (if using) until the sugar dissolves.

  3. Marinate: Toss the broccoli stems in the marinade, making sure they're well coated. Let them soak for at least 2 hours, but overnight is even better!

 How to Enjoy
