Easy Peasy Lemon Posset
This deliciously simple lemon cream dessert will definitely wow your dinner guests. Or how about make it on a casual Tuesday?! It's that easy that you can! It is important that you follow the boiling instructions carefully but trust us − the results are well worth it.
- 300 ml cream
- ¼ cup caster sugar
- juice of 1 lemon
- grated zest of 1 lemon
- Place the cream, sugar and lemon zest in a saucepan. Stir over a moderate heat and bring to the boil. Continue to gently boil for 3 minutes.
- Remove from the heat and stir in the lemon juice. Strain the mixture through a sieve into a jug, to remove the lemon zest (or if you're like us an are big fans of lemons, then you can leave the zest in!)
- Pour the lemon cream into individual serving dishes. Cool and refrigerate for 3-4 hours, or overnight until set.
- For garnish, you can zest some lemon skin or lime non top!
- Voila. Enjoy!
