  • 1 or 2 rhubarb stalks, cleaned and dried
  • 1 cup sugar
  • 1 cup water

    • In a small pot, combine 1 cup of sugar and 1 cup of water. Heat the mixture over medium heat, stirring until the sugar is fully dissolved.
    • Once dissolved, remove the pot from heat and allow the simple syrup to cool to room temperature.
  2. Create Rhubarb Ribbons:

    • Using a vegetable peeler or a small knife, carefully slice long, thin strips from the outer stalks of the rhubarb.
    • Soak the rhubarb ribbons in the cooled simple syrup for about 5 minutes to infuse them with sweetness.
  3. Bake the Ribbons:

    • Preheat your oven to 90°C (194°F). Line a baking sheet with parchment paper.
    • Lay each soaked rhubarb ribbon flat on the prepared baking sheet.
    • Bake for 1 to 1½ hours, or until the ribbons are dry. Note that they will remain sticky and flexible when you remove them from the oven.
  4. Curl and Dry:

    • Use 1 or 2 ribbons at a time. (Keep the remaining ribbons in the oven to maintain their flexibility.)
    • Loosely wrap each ribbon around a wooden spoon handle or a similar cylindrical object.
    • Let the wrapped ribbons dry for about 10 minutes, then gently slide them off to reveal beautiful, curled candy.
  5. Serve and Enjoy:
