Roast Yam & Chickpea Salad

Big handful of yams (sliced into arge chunks)

2 onion, red or brown (peeled & quartered)

1 can chickpeas, drained and rinsed

A good glug of oil
-
Leafy greens, we recommend spinach

Juice from 1 orange
- Spices of your choice! (What about 'cumin & paprika'? or 'oregano, cayenne, cumin, chili powder'?
- Preheat oven to 200°C
- Place yams, onions, chickpeas & spices in a large roasting dish
- Add oil and mix until everything is nicely coated
- Roast in oven for approximately 30 minutes or until beginning to brown and a fork can be easily popped into the yams
- Remove from oven and while still hot mix through the chopped greens and orange juice
- Serve warm (or you can serve it cold as a side salad!)
